Thank goodness my last midterm is over. Now all I have to work on is preparing for finals, haha, the never ending homework. Anyways this morning I had to wake up at 5:30 in the morning for work today which meant my breakfast had to be pretty fast. Breakfast consisted of almond butter and jam on a Ezeikel english muffin along with a sliced up banana. When I got off for work it was time for breakfast and I sure was hungry. I stopped by Trader Joe’s, which is next door to where I work, and picked up some sesame seed sprouted wheat bagels, hummus, avocado, and some other necessities. When I got home I made a bagel sandwich with some hummus, avocado, spinach, and some hot peppers. I also had it with a salad that included almonds, blackberries, and cranberries. This lunch was very satisfying and kept me full for a while.

Good Morning! I had to work at 6am in the morning so that meant a quick break fast of oatmeal (banana, flax, almond milk, and vanilla). After work I plan on going to the library to get some studying so i packed a simple lunch of an almond butter and jam sandwich with two small pears and some carrots.

For a snack I had a mint chocolate Luna tea cake and some dried bananas and cherries. UMM I love those luna tea cakes they are so yummy. For dinner I kept it simple because I have lab homework to do plus studying for my midterm. I had left over red pepper tomato soup with peas, some broccoli and roasted butternut squash, and two small pieces of toast.

Sorry I wasn’t able to post or take any pictures this weekend (I actually took two which I forgot I had). I went home this weekend and just hung out with my mom and tried to do some studying, however, I didn’t really get much done. So these next two days are going to be study, study, study.
To recap on my Saturday eating’s I had, yogurt and fruit in the morning along with a huge mug of my homemade soy latte, for lunch I had a avocado and tofu baguette sandwich with a salad of greens, tomatoes, cranberries, almonds, with some Annie’s dressing. For dinner I went to my dad’s house where my grandmother cooked some yummy Chinese food. My grandmother and aunt are both vegetarian so I was able to get a solid veggie meal in. Since it was more of a home style layout, I wasn’t sure how much I ate even though it was all pretty healthy.
Sunday’s recap was 1/2 a sprouted wheat sesame bagel from Trader Joes’s with a tbsp of PB and some jam along with a yogurt and a homemade soy latte for breakfast. For lunch we had a BBQ for Mother’s Day. It was good to see all my aunts, uncles, and cousins (esp. my cousin’s little baby who has grown so much since I last saw him). There was a lot of meat at this BBQ but also some good vegetarian choices. I had a grilled corn, tofu with bamboo shoots and seaweed, salad with a little dressing, 3 pieces of a California roll, and some brown rice. I also had a small piece of strawberry cake that wasn’t very good. Then after the BBQ I drove back to my apartment at school and buckled down to study. For dinner I kept it simple and had tomato and red pepper soup with some green peas, some broccoli and butternut squash, and two small pieces of toast.

I ended up eating my fruit at home rather than in the car. Its so much easier to eat juicy fruits when its not dripping all over your hands, leaving them all sticky. So I cut up my apple and a kiwi and had it while organizing and watching The Office (my mom tapes it for me). A little while later I met my mom at the gym and did the StairMaster for 30 minutes while chatting with her. Before dinner I had a small handful of almonds and dried pineapple. For dinner I decided on the chickpea tacos from Happy Herbivore along with some steamed broccoli. The tacos were so messy but so worth it because they were scrumptious. I also added some mashed avocado and salsa on top which made it even better. I’ll try to study more tonight, for my midterm next week, but I don’t know how much I will get done. Ha ha. This weekend I just plan on hanging out with my mom and celebrating Mother’s day with her. I bought her Wicked tickets as a present… I can’t wait to give them to her. I’m not sure how much I’m going to blog this weekend because my meals are going to be cooked for my whole family rather than just myself. Have a good weekend and Mother’s Day.
